10 Minute Lidl Cake Hack

It’s no secret, I love cake, but life of late hasn’t been very conducive with allowing time to bake.

This 10 minute cake hack, using a £4.99 Lidl Pandoro, is a firm family favourite here. Perfect for special occasions, like Christmas breakfast, New Year’s Eve celebrations with friends or just a simple, quick to rustle up afternoon treat.

Deliciously light, with a Brioche vibe about it, this cake is so good, I’m wishing I had a slice to enjoy as I sit here writing.

This Italian style sweet cake bread is only available (from Lidl) at this time of the year, so get yours asap and don’t forget to save this post, to refresh your memory for next year. Perhaps this will be a new, quick and easy addition to your family’s Christmas traditions.

 

I won’t try to make this sound more complicated than it is, here’s the very simple directions -

  • Pandoro - Lidl’s is the best I’ve found, obviously you could use one from anywhere else too

  • Apricot Jam

  • (Whipped) Double Cream - I’ve always whipped it myself, but bought extra thick double cream last week by mistake and it still worked well. I prefer the look and volume of the whipped though.

 

Cut your Pandoro into slices. It’s up to you how thick or thin you want to make them, the more slices, the more layers of filling - never a bad thing!

Starting with the largest (base) slice, layer up on your serving dish - Pandoro, apricot jam, whipped cream and repeat!

 

That’s it!

You can decorate how you wish, I like to add my favourite beeswax Celebration candles. Dust with icing sugar, maybe add some little Rosemary sprig trees…

I tend to leave off the last Pandoro slice, I prefer the look of the top being fresh cream, but you can play around and make up your own mind.
